Weekend Recap & Nuun Hydration Giveaway Winner!

Happy Labor Day guys!! Hope you guys are all enjoying the long weekend 🙂 I know I definitely am, especially since I don’t have any friday classes..4 day weekend!!

Friday

On Friday, I decided to take a rest day and get a ton of homework done. I hadn’t taken a rest day in almost 2 weeks. I always feel incredibly guilty on rest days but I know that my body needs it in order to continue to perform at its best. I got a ton of homework done, and had work in the evening.

Saturday

I was thrilled to be back in the gym on Saturday!! After work in the a.m., I ran 3.15 miles without stopping on the treadmill (very proud of myself for having come this far!!) and did some abs. After the gym, I grabbed coffee with my Quest Bar (one of my favorite parts of the day) and took my car, Mimi, to the dealership for a service appointment. While she was being worked, on, I went shopping with my mom and bought lots of clothes for school – Old Navy is my favorite place for jeans/pants!!

Skipping ahead to later at home, I prepped all my dinners for the week – lots more variety than there has been lately. More on that on Wednesday 😉

Sunday

Sundays are one of my favorite days. We (kayla and I) had spin class with our favorite instructor, and then got coffee with our quest bars, (agian, favorite.) and headed to a local farmer’s market that we had never been to before. Let me just say – I love farmer’s markets. I love knowing that the food you’re buying is locally grown and organic. All of the vendors are extremely friendly and there was even music too!!

The local farms also have a very interesting variety of produce that you won’t always see in a grocery store. One farm had green zebra tomatoes – how cool right!?

Just look at how colorful all these veggies are!!

It’s also in a very cute part of town with little cafes, restaurants, and shoppes. This was a great way to spend an afternoon with my best friend!! I did end up buying some very colorful peppers, and some pumpkin butter!! I can’t wait to try out a new oatmeal recipe with it 🙂 So ready for all these fall flavors to come back!!

When I got home, I finished up prepping some more food for the week that I didn’t have time to do on Saturday. I also experimented with a new recipe, which will also be discussed on Friday 🙂

After cooking, I headed over to Kayla’s for a Labor Day Picnic!! Her mom always throws such nice picnics and has such a good variety of yummy, healthy food!

Top left: Apple chicken sausage, veggies, & homemade dip/dressing – recipe coming friday!

Top right: Bean salad & Chickpea salad

Speaking of Labor day…Kayla brought to my attention that neither of us (her and i) actually know what Labor Day celebrates. Probably makes us sound super dumb..haha so here are the results of my googling: (history lesson time!)

It is the creation of the labor movement, and is dedicated to the social and economic achievements of American workers. It’s a yearly national tribute to the contributions workers have made to our country’s strength, prosperity, and well-being. Its first government recognition came through municipal ordinances passed during 1885-86.

By the end of the 1880’s, it had been passed by most state legislations as a national holiday in honor of workers, and on June 28, 1894, Congress passed an act making the first Monday of September a legal holiday in D.C. and all its territories.

It has been evinced that the holiday was first suggested by Peter McGuire, general secretary of the Brotherhood of Carpenters & Joiners and cofounder of the American Federation of Labor, as a day to honor those “who from rude nature have delved and carved all the grandeur we behold“. However, recent research supports the contention that the founder was Matthew McGuire, a machinist, and that he proposed the holiday in 1882 while serving as secretary of the Central Labor Union in NY.
